제사지내는 날, 귀한 생선음식 Jesa is a memorial ritual where families come together to honor their ancestors. Koreans have long believed that the souls of their ancestors protect them, and the food served on the jesa table was always made with the best ingredients with utmost care. With food from the skies, earth, and sea, the jesa table is an excellent snapshot of Korea’s regional food culture. In the Gyeongsang-do provinces, dombaegi, or chopped shark meat, is a staple at jesa. Koreans began eating shark during the Neolithic Age, and it has always been a rare delicacy — sharks can only be caught in May and June. In the Jeolla-do provinces the fish of choice is hongeo, or skate. The Korean skate caught on Heuksan-do Island is extremely expensive, going for 600 to 700 dollars each. At Nampa Gotaek, the home of the Milyang Park clan, skate is carefully grilled before being served. After each jesa ceremony, the gathered family members would share the jesa food among themselves. Jesa is a banquet for the ancestors, a feast for the descendants. In this episode, we explore Korea’s jesa culture, and the fish dishes that stand at the center.
