PRINT RECIPE for Whole Wheat Pancake and Muffin Mix: http://cookinglessonsfordad.com/whole-wheat-pancake-and-muffin-mix/ __________________________________ RECIPE: Whole Wheat Pancake and Muffin Mix INGREDIENTS: 1 cup walnuts 6 cups whole wheat flour 1/3 cup cornstarch 1/4 cup baking powder 1/3 cup date or coconut sugar 1 tablespoon kosher salt INSTRUCTIONS: 1: Place 1 cup of walnuts and 1 cup of flour in a food processor. Process until the nuts are fine like the flour. (Repeat this step if you are doubling this recipe) 2: Pour nut and flour mixture into a large mixing bowl. 3: Add the rest of the flour, cornstarch, baking powder, sugar, salt into the bowl. Mix all the ingredients together. 4: The mix is ready to use. Store unused mix in a freezer bag or plastic container in the freezer until ready to use. 5: See the recipes to make pancakes or muffins. NOTES: I use non-GMO cornstarch. I recommend using baking powder without aluminum. You can double this mix if you like. (Before heating spray the skillet with a cooking spray if desired.) 2: In a mixing bowl or large glass measuring cup, stir together the pancake mix and water. (You can double or triple this recipe if desired) 3: Pour about 1/4 cup pancake batter onto a hot griddle or skillet. 4: Cook until pancake is bubbly on top and dry around the edges. Turn and cook the other side until golden brown. NOTES: These are pancakes from my Whole Wheat Pancake and Muffin Mix. Mix the ingredients in a large measuring cup for easy pouring. If making lots of pancakes, keep them warm in a single layer on a wire rack or parchment paper lined baking sheet in a 200 degree oven (stacking the pancakes may make them soggy). __________________________________ PRINT RECIPE for Muffins from Whole Wheat Mix http://cookinglessonsfordad.com/muffins-from-whole-wheat-mix/ __________________________________ RECIPE: Muffins from Whole Wheat Mix INGREDIENTS: 2 1/4 cups whole wheat pancake and muffin mix 3/4 cups water 1/2 cup applesauce, mashed banana or pumpkin 2 - 4 tablespoons honey or agave 1/2 cup raisins, small dried fruit pieces or blueberries (if desired) 1/2 cup chopped nuts (if desired) Baking spray if needed INSTRUCTIONS: 1: Preheat oven to 350 degrees. Spray muffin tins with cooking spray or line with paper baking cups. 2: Stir together ingredients in a mixing bowl. 3: Fill muffin tins 2/3 full. 4: Bake about 25 minutes or until golden. NOTES: These are muffins from my Whole Wheat Pancake and Muffin Mix.
