VEGAN FRIENDLY WHAT I EAT IN A DAY | getting back on track and how I stay healthy as a medical school student ???
As students we all know you have NO TIME, NO MONEY and NO MOTIVATION to eat healthily. However, I live by the phrase "you are what you eat" and I really believe in making sure you fuel your body with a balanced diet and not just JUNK! That being said with lockdown the last week weeks have been a-bit of a flop but today that all changes and we are going to get our fitness goals back on track! I hope you enjoy the recipes and find some inspiration on how you can stay healthy as a student too...

Sweet potato chilli recipe: makes 4
- 1 aubergine
- 1 onion, finely diced
- 2 garlic cloves (or 2 tsp of garlic granules if your really lazy like me!)
- 1 tsp paprika
- 1 tsp ground cumin
- salt & pepper
- 125g dried green lentils
- 1 vegetable stock cube
- 1 400g chopped tomatoes
- 2 tbsp of tomato puree
1. Cut the aubergine into very small cubes, line a baking tray with parchment and spray with a little oil (or you can skip this part and just cook them plain.) Bake in the oven at 200 degrees for 20 minutes until soft.
2. In a large pan add the onion, garlic and a little water or oil and cook until soft, for 5-10 minutes. Then add the paprika, cumin, lentils, 400ml of boiling water, vegetable stock and some salt & pepper. Bring to boil and simmer for 15 minutes.
3. Add the chopped tomatoes and puree, then cook for another 30-45 minutes depending on how long the lentils take to cook (add a little more water if the lentils are too dry or not cooking)
4. Mix in the aubergine and then portion out into 4 meals.
Then, just cook 1 sweet potato or jacket potato in the oven an hour before you want to eat one of your ready made meal.
