Sign up for SMART GIRL SUMMER here: https://theteamplans.com/pages/sgs ------------------------------- SPAGHETTI SQUASH PAD THAI (WHAT YOU NEED) (Pad Thai) 1 spaghetti squash, halved and cooked Cooking spray 1 tbsp minced garlic 8 oz uncooked chicken / shrimp / or tofu, diced 2 whole eggs* 2 cups fresh bean sprouts 1 red bell pepper, thinly sliced 1 carrot, thinly sliced or spiralized ½ cup dry roasted peanuts, chopped 2 limes, cut into quarters Cilantro, for garnish Green onions, for garnish Cooking spray, as needed (Sauce) 3 tbsp fish sauce 1 tbsp soy sauce 2 tbsp rice vinegar 1 tbsp sriracha sauce, or as desired ¼ cup honey 4-6 tbsp powdered peanut butter (WHAT TO DO) 1-Heat cooking oil in a large pan or wok over medium heat. 3-Add chicken / shrimp / or tofu, minced garlic, bell pepper, and carrot. Stirring ingredients until fully cooked and veggies have just softened. 4-While pad thai ingredients are cooking, combine the sauce ingredients by hand or using a blender and set aside. 5-Remove pan from heat, draining excess liquid as needed, then return to medium-low heat. Push ingredients to one side, adding cooking spray as needed, then add eggs (or extra firm tofu) to the pan. Scrambling until fully cooked and broken up into little pieces. 6-Stir together all ingredients, then add cooked noodles, sauce, bean sprouts, and peanuts to the pan - saving some peanuts for garnish. Toss mixture until fully combined. 7-Remove from heat and serve with lime, cilantro, green onions, and peanuts as garnish. *NOTE: for a vegan swap, substitute 2-4 oz of extra firm tofu for whole eggs or omit entirely. . BROWNIE MUG CAKE (WHAT YOU NEED) 1 scoop chocolate protein powder* 1 whole egg** 1 tbsp coconut flour 2 tbsp sweetener of choice (I use stevia baking blend) 1 tsp baking powder 1-2 tbsp cocoa powder* 1/4 cup milk of choice (I use almond milk) Cooking spray of choice (WHAT TO DO) 1-Combine all ingredients until smooth. 2-Cooking spray a mug, then pour in mug cake mixture. 3-Microwave on 50% power for 2 minutes, checking, then returning to microwave in 1 minute increments (still at 50% power) until center is just set.
