Vegetable Fritters
These Vegetable Fritters are really easy to make, a combination of veggies, eggs, flour, salt and pepper. They are bursting with flavors and have a delicious, crunchy texture you'll love. Served with dipping sauce, mine is Manong’s Fishball Sauce, it is good as appetizer or you can have them for breakfast, lunch or dinner.

My cooking/baking is based on my personal taste and I always do it my way. I just love cooking food and making video recipes of it, even my first time cooking. Ingredients:
1 eggplant, peeled and chopped into small cubes
1 potato, peeled and chopped into small cubes
1 carrot, peeled and chopped into small cubes
1 onion, chopped
3 cloves garlic, chopped
2 eggs
3/4 cup all purpose flour
salt and pepper to taste
Instructions:
*Heat oil in a cooking pot.
*Sauté garlic and onion.
*Add the eggplant. Cook for 15 mins or until it becomes soft.
*Place the cooked eggplant to a bowl, then lightly mash them.
*Combine mashed eggplant, carrot, potato, flour and eggs. Add baking powder, pepper and salt. Mix until all ingredients are well blended.
*Heat oil in a cooking pot using low fire.
*Scoop one spoonful for the vegetable mixture.
*Fry both sides until the color turns golden brown. Repeat this for all the fritters.
*Transfer the fritters to the plate.
*Serve immediately with your favorite dipping sauce.
