Spicy and Flavorful Shinwari Karahi Recipe: A Taste of Pashtun Cuisine Shinwari Karahi is a popular Pakistani dish that originates from the Pashtun (Pakhtun) region of Pakistan, particularly the Shinwari tribe in Khyber Pakhtunkhwa province. It is a delicious and flavorful preparation of karahi, which is a type of wok or deep, circular cooking pan used in South Asian cuisine. Here's a basic recipe for making Shinwari Karahi: Ingredients: - 500 grams of boneless chicken or mutton, cut into small pieces - 2-3 tomatoes, chopped - 1 large onion, thinly sliced - 4-5 green chilies, chopped - 2-3 cloves of garlic, minced - 1-inch piece of ginger, grated - 1/2 cup cooking oil - 1 teaspoon cumin seeds - 1 teaspoon coriander powder - 1 teaspoon crushed red chili flakes - 1 teaspoon black pepper powder - Salt to taste - Fresh coriander leaves for garnish Instructions: 1. Heat the cooking oil in a karahi or a deep frying pan over medium-high heat. 2. Add the cumin seeds and let them sizzle for a few seconds until they release their aroma. 3. Add the thinly sliced onions and sauté them until they turn golden brown. 4. Add the minced garlic and grated ginger, and stir-fry for a couple of minutes until the raw smell disappears. 5. Add the chicken or mutton pieces to the pan and cook until they turn brown on all sides. This will take about 8-10 minutes. 6. Once the meat is browned, add the chopped tomatoes and continue to cook until they become soft and the oil begins to separate from the masala (spice mixture). 7. Now, add the coriander powder, crushed red chili flakes, black pepper powder, and salt to taste. Mix well. 8. Add the chopped green chilies and cook for a few more minutes, stirring occasionally. 9. Cover the karahi and let the meat simmer on low heat until it is tender and cooked through. This might take another 20-30 minutes, depending on the type of meat you're using. 10. Once the meat is cooked, garnish the Shinwari Karahi with fresh coriander leaves. 11. Serve hot with naan or roti. Shinwari Karahi is known for its spicy and flavorful taste, thanks to the use of green chilies and aromatic spices. Adjust the level of spiciness to your preference by adding more or fewer green chilies and red chili flakes. Enjoy this delicious Pashtun dish!
