This recipe is one of my mother’s specialties and I have fond memories of eating it when I was a little boy. With Orthodox Easter around the corner, this is a fantastic meal to share with all members of the family. Plaki is a traditional method for preparing seafood that involves baking the fish with tomatoes and onions. This recipe uses cod, and fresh cod is much easier to work with. If all you have access to is salt cod, be sure to soak it for a few days in cold water to remove the salt. You’ll need to change the water about once every day.
