#mygadgetkitchen #ninjafoodi #pressurecooker One Pot Meal | Pressure Cooker Fiesta Chicken & Rice | Ninja Foodi 8qt | My Gadget Kitchen | #228 Ingredients: Bone in, skin on chicken thighs 1 small yellow onion, diced 1 red bell pepper, diced 1 green bell pepper, diced 1 cup white rice, rinsed 1 cup chicken broth 1 cup salsa 2 cups shredded cheese kosher salt chili powder sazon seasoning olive oil Directions: Season chicken on both sides and under the skin. Spritz with olive oil, transfer to Ziploc bag and marinate in fridge overnight or for 30 min. Preheat pressure cooker on saute hi, add olive oil. Brown chicken on both sides. Transfer chicken to a plate and saute veggies for 2-5 min until tender. Add rice and saute rice with veggies. Add broth and then return chicken to the pot. Top chicken with salsa. Cook on high pressure for 12 min followed by a quick release of pressure. Top chicken with cheese. Serve once cheese has melted. Enjoy Get out of the drive thru and get into the kitchen.
